Gluten-free Gingerbread Cookies

Gingerbread cookies ready to be iced. 😋 These cookies are gluten, dairy, egg, nut, and soy free. I used Bob's Red Mill 1-1 flour in the blue bag. Recipe here: https://www.vegannie.com/cookies/vegan-gingerbread-cookies/ Notes: I doubled recipe and used 1 part cane sugar, 1 part coconut sugar. Also added extra water until dough was smooth.
