Most times when people are eating gluten desserts around me, I’m fine. A couple months ago, however, I was at a meal that ended in chocolate chip cookie cake. And I wanted that cookie cake so much. We got home and I looked at my husband and said, “I’m going to make a chocolate chip cookie cake.”
So I did. Seriously, it’s that easy. And the cookie cake is delicious. Even my friends who don’t usually eat vegan or gluten-free loved it.
This post is actually a link to recipes. My only two tips before you click away: 1.) leave a 1-inch gap between the cookie dough and edge of pan before baking. 2.) It’s ok if the cookie is a tad soft in the middle. It will finish baking on the middle.
