Self-quarantine just about guarantees lazy Saturday mornings. So we made Belgium waffles with our new maker today. I modified a new pancake recipe (see this post). Next time around I may try white rice flour instead of brown rice flour.
Belgium Waffles
1 c. White rice flour
1 c. Sweet Sorghum flour
1 c. General Purpose Gluten Free flour
3 TBS arrowroot starch
1/2 c. Unrefined cane sugar
1 1/2 tsp. Baking soda
3 tsp. Baking powder
1 tsp salt
1 1/2 tsp. Cinnamon whisk dry ingredients, then stir in
3 TBS reconstituted flax seed meal
1/3 c. Melted coconut oil
1 tsp vanilla
2 TBS apple cider vinegar
3 c. Unsweetened coconut milk
We found that these cooked best on the higher settings on the waffle iron. We also left them on about a minute after the iron timer beeped to make sure they were done all the way through. Recipe’s a keeper! 😋
