When cold weather hits, one of the things I miss the most is hot chocolate. Six years ago, I found out that I was lactose intolerant, which meant good-bye to many things I liked — including hot chocolate packets. Or hot chocolate from a restaurant. I’d tried making hot chocolate from scratch before… with almost disastrous results. (Soy milk really shouldn’t be used in hot beverages. Or oatmeal.) However, since I found myself at home with some extra time, I thought I’d give it another try. This time I used Almond Milk (original). Hot chocolate is now back in my life and this snowy afternoon could not be cozier!
In a small sauce pan, heat (on medium heat):
4 cups of almond milk (original, not vanilla… there will be a little hint of almond in the cocoa)
1/2 cup of cocoa (maybe a little bit more… my measurement wasn’t exact)
1/4 cup of sugar
Stir with a whisk until the cocoa and sugar are dissolved. When heated through, pour in a mug and top with marshmallows. Smile.
Mmm! Hot chocolate!
